“We are known as Qalaiwalas of Hyderabad. We specialise in polishing the utensils with copper and brass coating. This takes a lot of hard work and patience, because it demands the attention of 5 workers on one utensil with extreme heat at a high temperature. We’ve been doing this for 30 years. These are the ones used to make the delicious Hyderabadi Dum Biryani, haleem and a few other popular dishes. Cooking food on the copper coated utensils is by far the safest option. But nowadays, people don’t want to spend much. They’re opting for cheaper stainless steel and aluminum, and that’s leaving us in losses. As a result of this, most of our shops have been closed down over the years due to severe losses. A tinned copper utensil can last up to six to eight months. We just hope people support us and use these copper and brass coated vessels so that everyone could be happy.”
