“If you come to Purani Haveli and ask for the Mughlai Naan, everyone will point out at two shops. One is the Munshi naan and the other one is ours – Abbasi naan.
Our forefathers had set up this naan shop first near the Begam Bazar around year 170 ago. But we had shifted to Purani Haveli lane some 75 years ago. We are the fifth generation of naan makers in our family.
Our day starts at five in the morning, depending on the order for the day and goes up to nine at night. A major part of our sales is through orders for functions like marriages, birthdays, functions. So work timing is irregular, though on average we work for 2-3 hours at a stretch before taking a break of equal duration.
We sell close to 1000-1200 naan every day, of which the square variety costing Rs 15 per piece is the favourite among buyers. Our staff comprises of five workers who handle the making, one for packaging and two family members who help oversee the tandoor. We also have five other different shapes such as star, heart, flower, circle etc. The rate depends on which shape the customer prefers. The tandoor is our pride can accommodate anywhere between 42-45 Rotis.
It takes just 2-3 minutes for one batch to be made. Even though we would like to try out new varieties by adding new flavours, our customers want us to retain the authentic taste of the naan. So we are maintaining the same taste and quality since many decades.”
